Baked Eggs in Peppers

Ingredients
 1 Egg
 1 Sweet Bell Pepper
 1 Handful of grated cheese
 1 tbsp Olive oil
Extras/seasoning of your choice (black pepper, salt, chives, thyme etc)
Method
1

Cut the lid off the sweet bell pepper and remove the middle part.

2

If the pepper does not sit well flat, slice a tiny part off the bottom (ensure not to create a hole in the pepper), so it stands upright without falling over.

3

Spread the oil onto a baking tray, then sit the empty pepper on top.

4

Sprinkle half the cheese in the sweet bell pepper and crack the egg on top.

5

Careful sprinkle the remaining cheese around the sides on top of the egg leaving a gap in the middle for the yolk to cook without being covered.

6

Add your extras and seasoning as you see fit.

7

Bake for 10-12 minutes at around 200 degrees and voila!
