Egg Fried Rice with Carrot

Perfect side dish and one of your five a day too! To enjoy it on its own simply add more vegetables - peas, broccoli, mushrooms, anything you have in a fridge. Or add some soy sauce for an oriental twist!

 1 cup cooked rice
 1 carrot
 1 egg
 1 tbsp olive oil

Heat oil in a medium frying pan or wok. Saute carrots and other vegetables for 2-3 minutes.


Stir in the cooked rice, mix well, sprinkle with salt and pepper and cook for 2 minutes util piping hot.


Add the egg and stir fry for another 2 minutes.


Serve hot or at room temperature as a cold salad.
