After a long day the last thing you want to do is cook.  It’s time consuming and creates a lot of mess and washing up to do.  Especially if you’re home alone, it hardly seems worth it.  Well, these microwave recipes can help you out; not only do they reduce the number of pots and pans you need as they use the microwave, but they are perfect for when you’re only cooking for one.

Breakfast Microwave Recipes

Granola

I have seen so many granola recipes that have all sorts of nuts and seeds and other fancy or hard to find ingredients.  While they all look delicious, these recipes can take ages to prepare and cook, plus, they can become pretty expensive.  Then I stumbled across some ‘granola in a mug’ microwave recipes and I couldn’t believe my luck.  This granola takes just five minutes to make and uses only five ingredients, though you can add more if you like, creating the perfect breakfast meal for one.

French Toast

If you thought the five-minute granola microwave recipe was quick you’ll love this two-minute French toast.  All you need is a little butter, a little egg, a dash of milk, a sprinkle of cinnamon, and of course a slice of bread.  It’s the perfect thing to make if you have a sweet tooth and want to start your day with a warm toasty feeling.

Lunch/Dinner Microwave Recipes

Risotto

These microwave recipes for risotto are the best thing for when you want to settle in front of the telly for a quiet night in with a soft blanket and a warm feeling in your belly.  This meal for one takes just ten minutes and is incredibly versatile, easily adapted to suit your tastes, whether you want to make the basic recipe or experiment with other flavours it’s completely up to you.

Veggie Chili

Chili is one of the best comfort foods, it makes me feel so warm and fuzzy, but it takes so damn long to make!  Once everything’s in the pot you have to hang about for an hour or so while it simmers away.  Not with this chili.  This vegetarian kidney bean chili takes just fifteen minutes to prepare and cook, as microwave recipes go that’s pretty good.  Plus, this recipe can be a meal for one or two, so if you do have someone over and want to whip something up quick this is a great option.

Macaroni cheese

I take it back, chili is good, but macaroni cheese might be the ultimate comfort food.  As someone who used to have to stand over the hob continually stirring the white sauce and trying not to overcook my pasta this is one of the microwave recipes that has saved me the most.  Really easy and quick to make taking just fifteen minutes, as long as you’re vigilant and don’t let the pasta dry out you’ll be golden.

Salmon en Papilotte

Out of all of these microwave recipes, this salmon meal for one is best if you’re looking for a healthy dish.  Comprised of salmon, potato, leeks, onion, celery, and parsley, this recipe is full of goodness and can be made in under ten minutes.

Dessert Microwave Recipes

Rice pudding

A classic dessert, rice pudding is a great dish to have if you want something sweet and filling.  Like it’s savoury relation risotto rice pudding microwave recipes can be incredibly versatile, while some simply add a dash of vanilla and a sprinkle of cinnamon, others get more creative.  For example, if you want to make this dessert more refreshing or offset the sweetness you can add some fruit.

Chocolate chip cookie

Everyone loves chocolate chip cookies, but if you don’t want to make a whole batch we have the perfect cookie meal for one right here.  It’s a really easy recipe as you essentially just mix all the ingredients together and bung it in the microwave for a minute.  You could even treat yourself further and get some ice cream to go with it.

Mug Cake

There are so many different mug cake microwave recipes out there that it’s hard to choose just one, so my advice is to try out every recipe you can find and then decide which one’s your favourite.  One of the cakes I like the most, though, is the Nutella mug cake; it’s so easy and uses just four ingredients.  Make sure to keep an eye on it when it’s in the microwave though, I’ve had a few burnt tops throughout my mug cake tenure and the disappointment is terrible.

Your microwave will probably be worn out by the time you’ve made it through all these, and your oven will be wondering why its even still around.  You’ll never be stuck wondering what to cook or how to adapt a recipe for a single serving with a meal for one in your back pocket at all times.
