Sometimes, vanilla just won’t do, so thankfully, Chocolate Mint Day is giving us an excuse to be more adventurous with our ice cream making. To celebrate National Chocolate Mint Day, it would only make sense that we provide you with a delicious and super simple to make mint chocolate chip ice cream you can make at home.

Ingredients

2 cups heavy cream
2 cups low fat milk
1/2 teaspoon salt
1 cup sugar
1 teaspoon peppermint extract
1 teaspoon vanilla extract
1 cup chocolate chips
green food colouring (optional)Chocolate MintMethod

In a large mixing bowl, stir together the heavy cream, low fat milk, peppermint extract and vanilla extract until all the sugar has fully dissolved. If you’d like, you can use green food colouring to achieve that typical mint ice cream look.

Using an ice cream maker, pour in your mixture and freeze it according to the instructions from the manufacturer. After about 10 minutes of freezing, pour in your chocolate chips. After around 30 minutes, the ice cream should have thickened – transfer it to an ice cream container and freeze for at least 2 hours. Garnish with a mint leaf before serving.

USING FRESH MINT

If you’d like to use fresh chopped mint instead of the peppermint extract, you can do this by gently heating the milk (full fat) and cream until boiling, removing it from the heat, and then steeping it with freshly chopped mint leaves for around 20 minutes. Strain the mint leaves and leave the mint infused cream and milk mixture to cool. Continue on with the recipe as normal .
