Ingredients

Method

  4. Keep stirring the rice allowing to drain for 5 minutes
  5. Melt the butter and heat the oil over medium heat in a 12-inch skillet.
  6. Add the rice and cook for about 5 minutes continuously stirring until the rice turns into a golden colour.
  7. Add shallots and garlic to the rice and continue to cook further for 1 minute.
  8. Stir the chicken stock well and pour 1 cup over the rice.
  9. Let the mixture simmer over high heat, give the rice a stir, reduce heat to lowest, cover the skillet with a lid and continue to cook for about 10 minutes.
  10. Add the remaining chicken stock, give the mixture a good stir and cook over high heat until you get a super creamy risotto.
  11. Take the risotto off the heat, add cream, cheese, garnish off with some freshly chopped herbs and your perfectly cooked risotto is ready to be served.
