This tasty and simple one-pot pasta dish takes less than 30 minutes to prepare, and like the name suggests – it only requires one large pot! So that’s even less time spent washing up. Bonus!

Serves: 6

Ingredients

200g mushrooms
400g artichoke hearts
4 garlic cloves
5 cups vegetable broth
1 medium onion
300g fettuccine
2 tablespoons olive oil
120g frozen spinach
1/2 teaspoon dried thyme
1 teaspoon dried oregano

Method

Wash the mushrooms and slice them thinly. Drain One-pot pastathe artichoke hearts and chop them roughly into bite-sized pieces. Mince the garlic (or slice if you’d prefer) and thinly slice the onion.

In a large pot, add the olive oil, mushrooms, vegetable broth, artichoke hearts, garlic, and onions. Snap the fettuccine in half and add it the pot along with the thyme and oregano before seasoning well. Make sure the broth is covering the ingredients the best it can before placing a lid on the pot and bringing it to the boil on high heat.

When it reaches the boil, regularly stir it to prevent the pasta sticking and to evenly distribute the ingredients. Reduce the heat to low, and bring the pot down to a simmer for 10-15 minutes; most of the liquid should be absorbed and the pasta should be soft and tender. Remember to stir the pot every few minutes to prevent sticking. When it is cooked through, throw in the frozen spinach and allow the heat to thaw it. Stir to prevent the spinach from clumping, and then serve immediately.
