  • 225 grams of salmon.

The rice should be tender and creamy when the stock has been used up.
  9. Then add the grated cheese and stir well, with the pan already off the heat.
  10. Finally add the salmon cut into strips, spreading it well over the rice. You will see that the dish acquires a creamy texture without any broth, which is exactly what a risotto should always have.
