The rice should be tender and creamy when the stock has been used up.
- Then add the grated cheese and stir well, with the pan already off the heat.
- Finally add the salmon cut into strips, spreading it well over the rice. You will see that the dish acquires a creamy texture without any broth, which is exactly what a risotto should always have.
