The curried sauce makes a lovely sandwich filling or potato topping. You could also use other roasted meats such as chicken, ham, lamb, beef and pork.

250 g cooked turkey cut into bite sized pieces
2 apples, peeled and chopped
75 g walnut, roughly chopped (optional)
1 thin cucumber, cut into slices on the bias
50 g black or white grapes, halved
For the curried mayonnaise
240 ml mayonnaise
2 garlic clove, crushed
Juice of 1/2 lemon
2 tbsp mango chutney
2 tbsp curry paste
2 tbsp tomato ketchup

Mix all the dressing ingredients together in a bowl until well mixed. Taste and add salt and pepper if necessary.

Add the cooked turkey, chopped apple and walnuts.

Spoon onto slices of cucumber and top each with half a grape.
