A delicious pan-fried side dish, golden potato patties with onion, garlic and thyme. You can freeze the rösti – just warm it through in the oven before serving.

 12 Maris Piper potatoes, peeled and coarsely grated
 6 Thyme sprigs, leaves stripped
 1 pinch Salt
 1 White finely diced onion
 2 Cloves of garlic, diced and crushed
 30 g Unsalted butter

In a bowl mix together the grated potato, 1/2 the garlic, onions and thyme. Season.

Melt the butter in a pan and add the garlic. Until it starts to brown.

Place a metal cookie cutter in the pan and tightly pack in the potato mixture.
Don't worry if you don't have a cookie cutter, just place the potato mixture in the pan roughly in a circle shape.

Fry for 2 minutes on each side, until golden brown.
Use a fish slice to flip them over. Carefully remove cookie cutter, it will be hot.

Spoon over the garlic butter.

Finish in the oven for 15-20 minutes.
