A great pantry staple, couscous is something you can turn to when you are running out of inspiration and ingredients in your kitchen. This bright tangy Indian inspired couscous dish requires minimum prep and the most basic ingredients to whip up a quick meal for a busy or broke week.

 0.50 cup Couscous
 4 tbsp Finely chopped red onion
 1 tsp Finely chopped garlic
 1 tsp Finely chopped ginger
 2 tsp Finely chopped green chillies
 0.50 cup Frozen peas
 Turmeric powder
 Salt
 1 tbsp Lime or lemon juice
 2 tbsp Finely chopped coriander leaves
 2 tbsp Oil

First off, prepare the couscous by adding it to a bowl and pouring warm water till the water reaches the level of the couscous. Cover with a lid and leave it aside.

In a pan, heat some oil and add all the veggies except the peas and coriander leaves. Keep the heat low and sauté till lightly golden.

Add the peas and turmeric and fry till the raw smell of the raw smell of the turmeric goes away. Add salt and stir to combine.

Fluff up the couscous with a fork and add to the pan. Mix everything well and finish with lime juice and coriander leaves. You can substitute coriander with parsley, basil or even spring onion greens.

This can be served as is or top it with a fried egg or dollops of yoghurt to amp up the protein.
