Whoever thought to put banana and chocolate into a cake together was a genius.  The two go so well together and make for a flavourful and fluffy cake.  Here’s how to make a chocolate banana loaf.

Ingredients

  • 250g plain flour
  • 250g golden caster sugar
  • 125g unsalted butter (plus a little extra for greasing the tin)
  • 2 large eggs, free-range or organic
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 4 ripe bananas
  • 175g dark chocolate chips or dark chocolate

Supplies

  • A 900g loaf tin
  • An electric whisk (or regular whisk but be prepared for a workout!)
  • Baking paper
  • Sieve

Method

Firstly, preheat the oven to 180°C/gas mark 4.

Cream the butter and sugar in a bowl with the electric whisk, then add the eggs one at a time mixing after each one.

Add the vanilla extract and briefly whisk the mixture again.

Sift the flour and baking powder into a bowl to get rid of any lumps, then gradually add them to the butter and sugar mixture beating the mixture as you go until everything is well-combined.

Take each banana and mash them together in a bowl before adding them to the batter, beating it again.

Finally, stir in the dark chocolate chips or smash your dark chocolate into small pieces and stir them in.

Take the chocolate banana loaf tin and grease it before lining it with baking paper.

Next take your finished batter and pour it into the chocolate banana loaf tin, making it as even as possible using a spatula.

Bake the loaf in the middle shelf of the oven for approximately 50 minutes, or until you can insert a skewer into the cake and it comes out clean.

Take out the chocolate banana loaf and leave it to cool.

And that’s it.  A really easy cake to make that everyone can enjoy.  My top tip when you have a slice of chocolate banana loaf is to warm it up in the microwave for a few seconds and pair it with some ice cream.  Delicious!
