The summer weather has finally arrived, and (touch wood) it looks like it’s here to stay.  I don’t know about you, but I’ve been finding it hard to keep cool.  Cracking a window open just isn’t doing it for me.  To combat the heat I’ve tried to get my hands on any summer dessert I can find.  This has resulted in a list of summer desserts that I am willing to share with you.

Chocolate Mint Ice Cream With Chocolate Mint Sauce

This summer dessert is a slight cheat as you don’t actually make the dessert from scratch.  However, it’s a really good way to liven up your vanilla ice cream and make it more interesting.  The chocolate mint ice cream is quick and easy to do and addition of the sauce makes you feel like you’re getting ice cream from a restaurant.  Most importantly, as should be the case with all summer desserts, it’s cool and tasty.

Eton Mess

A quintessential summer dessert, Eton mess has a bit of everything: meringue, cream, fruit.  What more could you as of your summer desserts? It’s also quite versatile, I’ve improvised Eton messes using yoghurt or ice cream when I didn’t have cream.  Every version was good.  If you aren’t able to make meringue at home, you can always take a short cut and buy them pre-made.

Frozen Banana Lollies

This is the perfect summer treat for children, or for the big kid you are deep down.  It’s also a good way to have a treat without being horrendously unhealthy.  If you have a child who doesn’t like fruit these summer desserts are a good way to compromise. They get the chocolate and sprinkles they like, while also eating bananas and strawberries, full of potassium and vitamins.  It’s a win-win.

Elderflower Sorbet

Got some time on your hands this summer? Why not try making this frozen summer dessert?  This recipe is extremely refreshing and is suitable for people who have milk allergies or are lactose intolerant.  Plus, scraping the sorbet from the container is really satisfying for some reason.  One of the best summer desserts to wake you up and drive off any lethargy that might have been creeping in.

Summer Pudding

What could be more appropriate for summer than a summer pudding?  It’s all there in the name!  This classic British summer dessert is packed full of juicy berries and is the perfect combination of sweet and tart.  Who would have thought such a delicious summer treat was made from the bread you eat for lunch every day?

Gin & Tonic Cheesecake

If you’re looking for summer desserts that are a little more grown up, you should definitely give this Gin & Tonic cheesecake a go.  This is a lovely way to end a summer get together in the evening; a zingy summer dessert with a bit of a gin-based kick to it.  It’s simple to make, yet I guaranteed if you serve this everyone will think you are some sort of pâtissier.
