I first became aware of this recipe thanks to one of my teachers in secondary school.  Since then I have passed me wisdom on to my sister, who made these brownies for many special occasions.  They always went within in minutes; they are that good! But, let me tell you now if you are on a diet or looking for a low-cal dessert abort now, this recipe is not it!  However, if you are looking for a 3-in-1 dessert that has an Oreo layer, cookie layer, and a layer of brownies stick around.  These Oreo cookie brownies are possibly the best thing you will ever make!

The Cookie Layer

First up is the cookie layer, now you can cheat if you want and buy a cookie mix to make things easier and speed up the process (no judgement if you do, I’ve used this method before).  If not you’ll need these ingredients:

Ingredients

  • 115g/4oz Unsalted Butter
  • 225g/8oz Plain Flour
  • 1 tbsp Cornflour
  • 125g/4 ½oz Light Brown Sugar
  • 1 Medium Egg
  • ½ tsp Vanilla Extract
  • 1/2 tsp Bicarbonate of Soda
  • 150g/5oz Milk Chocolate Chips (you can be cheeky and add a few more if you want!)
  • 1/2 tsp Salt

Method

Put your butter and sugar in a bowl and beat until fluffy.

Add the egg and vanilla extract and beat again until the mixture is smooth.

Gradually add the plain flour and cornflour, along with the bicarbonate and salt, and beat until the dough has come together.

Fold in the chocolate chips, trying to make sure they are evenly distributed throughout the dough.

Line a 9×9” baking tin with parchment paper and press the dough into it, so it covers the bottom of the tin evenly.

Chill in the fridge for 30 minutes.

The Oreo Layer

This layer is pretty simple, so you don’t have to worry about it too much.  It’s also an easy way to get young kids involved in the making of the Oreo cookie brownies if you have any.  Make sure you don’t forget to put the oven on though!

Ingredients

20 – 25 Oreos

Method

Preheat the oven to 180°C/160°C FAN.

Cover your cookie layer with the Oreos, so you should now have a cookie layer and a one biscuit thick Oreo layer.

Brownie layer

Last comes the brownie layer; this is the layer that holds the Oreo cookie brownies together.  You want to bake it long enough that it is sticky enough to hold the cookie and Oreo layers together, but not so long that it becomes over-baked and crumbly.

Ingredients

  • 50g/2oz Plain Flour
  • 25g/1oz Cocoa Powder
  • 140g/5oz Caster Sugar
  • 100g/3 ½ oz Unsalted Butter
  • 2 Medium Eggs
  • 100g/3 ½ oz Dark Chocolate

Method

Melt the dark chocolate and butter together until they’re smooth.

Next, whisk the eggs and sugar together until you have a thick mixture, then fold in the melted chocolate and butter mix.

Fold in the flour and cocoa powder.

Now pour it over the Oreo and cookie layers, making sure to spread the brownies mix evenly.

Put the brownies in the preheated oven and bake for approx. 25 – 30 minutes or until they are cooked through.

Once out of the oven leave the brownies in their tin to cool for about 10 minutes, before carefully taking them out of the tin to finish cooling down on a wire rack.

And you’re done.  Easy right? These Oreo cookie brownies go really well with ice cream as a dessert or on their own as a sweet snack.  They’re rich, dense, and delicious!
